Try this protein-packed recipe that features a delicious combination of edamame, fresh vegetables and a hint of balsamic vinegar.
ENERGIZING EDAMAME AND RICE SHAKER
5 ounces almonds, roasted, slivered
3 cups edamame, shelled, cooked, tempered
12 ounces brown rice, dry
2½ cups water
2½ cups green or red bell pepper, diced, fresh or frozen
2½ cups frozen corn, thawed
2½ cups mandarin oranges, canned, drained
1¼ cups balsamic vinaigrette dressing
Prepare rice and let it cool completely. Layer ingredients into a pan or bowl as follows:
- Bell peppers
- Mandarin oranges
Drizzle with balsamic dressing or a dressing of your choice.
