I love Mother’s Day. It’s the one day a year my children must stop their busy lives and remember they are surrounded by amazing women that love them. I count all the grandmothers, aunts and special family friends in this celebration. Without this village of women, they would not have the love and support to become successful in their lives. So to all the mom’s that work tirelessly to raise kids, work inside and outside the home, and drive countless hours to practices and play dates a heartfelt Thank You.

Applesauce Breakfast Cake

  • 1/2 cup margarine
  • 1/3 cup granulated sugar
  • 1 1/2 cups flour
  • 1 cup uncooked oats (not instant)
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/3 cup water
  • 1/2 cup chopped walnuts

Directions

Heat oven to 350 degrees. Lightly spray a 9-inch baking dish with nonstick cooking spray. Combine flour, oats, baking powder, cinnamon and salt. Blend with a wire whisk and set aside. Beat together margarine and sugar. Blend in egg. Add flour mixture, applesauce and water. Mix well. Fold in nuts. Spread evenly in the prepared baking dish. Bake 40 to 45 minutes or until golden brown. Cool completely. Cut into 12 squares. Yeilds 12 servings at only 184 calories/serving.
