4 pounds sweet potatoes
¾ cup plus 2 ½ tsp skim Milk
1/3 cup plus 1 tablespoon plus ¼ teaspoon Syrup (pancake and waffle syrup)
3 tablespoons plus ½ teaspoon margarine
Peel and dice potatoes. Steam or cook potatoes until soft. Warm milk and maple syrup to 180 degrees and hold.
In large mixer or with hand mixer whip for 30 seconds. Add the margarine, milk and syrup and mix. The potatoes should be creamy and fluffy. Heat to an internal temperature of 140 degrees F.
